Well if you are able to reinvest the money from all those synths into a nice controller solution that works well with both DAWs, maybe you should look into an Avid S1 + Dock. I don't think there is anything better.
But if I'm not mistaken the XTouch also works in EuCon mode, and is the only one that autobanks in Cubase/Nuendo. So if you are looking for a very cheap but great 1 fader + transport and a good wheel, it is a good candidate.
About the SB controllers you mentioned, you mean de CMC series right? I have the AI Knob one, and it still works ins Nuendo 13, but I'm on Windows. Macs usually have shorter compatibility cycles, so you should check if there are available drivers for your version.
Regarding the iPad, I know it is personal, but I never felt good using touch screens. It is very hard to form a muscular memory for the functions, from the lack of tactile feedback.
So I have one with a TouchOSC map I made for VST Multipanner, so I can record automation more easily, but for the rest I use the XTouch and a keyboard remapped through reWASD, only for key commands. It gives me like 60 buttons plus a dedicated scroller that I mapped to event volume. It works perfectly!
