Best Audio Interface around $3K? (Apollo vs RME UFX vs Apogee Ensemble)

It's that time of the year again (spending too much money and trying to justify Black Friday purchases :P)
I have been running the following:
2013 Mac Pro (Trashcan)
2007 Apogee Ensemble
STAM AUDIO Neve Preamp
Locomotive Audio V-72 Preamp
I am looking to upgrade to the following:
The new Mac Studio
New audio interface (my understanding is a thunderbolt interface has lower latency?)
My question: I've been out of the audio interface game for a while, and was wondering which you all are preferring these days, both for great sound and versatility of I/O?
I am currently considering The RME UFX II (read great things but never tried), The Apogee Ensemble, Or the UA Apollo (which has some great deals going on right now).
Also thinking of the Lnyx Aurora, but is there anything else worth considering around the $3K price point?
Are there ones you all are preferring from this list?
