It's been a while, but as far as I remember this means you get a 16 voice polyphony for that single patch. You shouldn't select two voices for making it behave like an original DX-7 (that would also mean you lose polyphony, but of course you can layer two (or more) voices (identical or different patches) and "fatten" it up, especially if you detune them slightly from each other.
And an unexpected bonus was that when changing patches on the DX-7 it also changed to the same patch number on the TX-802. It didn't go to another performance as I thought, so that's good news indeed!
As for outputs, press the "Perform edit" button, then button 3 (out) and use the +1/-1 buttons to select: both left and right outputs:

I haven't saved the performance yet, as this was just a quick test and I was going to put back the previous patches/performances anyway for now, but your posting got me thinking that this would be a great idea for auditing banks of 32 DX-7 patches, and it doesn't appear to do anything with the other patches (33 and onwards) as well as the performances -because the DX-7 has neither.
Like I said, it's been a while since I last used my TX-802, so in case my information is lacking I hope someone can step in and correct that info.
You mentioned using the Dexed softsynth to load and audit DX-7 sysex patches, but are you saying you're also using it to transfer patches to the TX-802?

Yes, I think performance is great, and layering sounds is very interesting but if you just want to use the TX802 as a DX7 or similar, is there a way?
I am guessing the only way is to setup a basic "performance" and just load a voice?
Yes correct, I am sending banks of patches (in this case, voices) from DEXED to the TX802. In Dexed when you load a syx file, in the screen where you have all the patch names, you can right click and select "send current sysex cartridge to DX7".
You have to have the TX sysex channel line up with your midi and also the same for Dexed.
I was doing this previously with the Volca FM and works very well. Specially with that big patch bank "DX7AllTheWeb" with hundred of sysex patch banks, there is so many sounds to start off with.
