Not quite sure what you're asking here, but MIDI and CV have no effect on the sound at all. That said, the Moog Sub 37 has MIDI in and out, as well as MIDI over USB. It also has CV inputs. So if you want to control the Sub 37 from another synth, you can do it via MIDI or CV. Conversely, if you want to use the Sub 37 to control other synths, you can do that via MIDI, or convert the MIDI to CV (which I think is what you were asking).
Either way, this won't affect the
quality of the sound. If you decide to control the Sub 37 via CV, you might lose some of the controller and modulation options that the Sub 37 can respond to over MIDI, but that still wouldn't affect the quality of the sound. It may not sound "exactly the same" as if you were controlling it via MIDI, since MIDI can transmit (and the Sub 37 can receive) several types of MIDI controller data that aren't available via CV.
