cold brew is more to bring out the fruity and mild "middle" aromas imo, its a a pretty different beverage than coffee I think.
I think its good for really cheap and "ugly" coffees, for good coffees not so much.
My late fathers neighbour, a peasant in a very rural mountain area in Italia, used to pour some drops of wine into his espresso. Like a teaspoon or three.
I never liked this but turns the coffe into a completely different beverage, much more than cold brew.
Also cools it down.
When I was a kid, and we were hiking the mountains, my father used to prepare some mess from strong tea or coffee and Italian lemonade, the sour fruity kind, and wine.
This was long before energy drinks hit the market.
Ocassionally hed also throw in some multi vitamin shit to the brew.
Decades later he complained why I became an alcoholic.
