Looking at purchasing a new interface for Logic Pro and a Mac. Have been using a behringer but don’t love it. Want something with at least 4-8 tracks and that would give a good and consistent sound. Thanks for any advice.

Interfaces don't have "tracks" they have inputs of various types.

Assuming you mean 4-8 analog mic inputs?

Not sure what you mean when you say you are looking for an interface that would give "consistant sound"?

What exactly is being inconsistant?

Even basic budget interfaces are capable of low noise, low distortion, and generally pretty good sound quality if used properly.

Also as mentioned by another here at least a rough budget of what you can spend is essential to the discussion.
