There's no notation editing in Mixbus or Ardour. See
Mixbus MIDI Editing for an explanation of MIDI in Mixbus.
There may be a cheaper option, but Reaper has a good notation editor and only costs $60. You could record your MIDI into Reaper, edit it there, and use the built-in notation editor for your scores. Kenny Gioia has a very good video tutorial on the notation editor in Reaper (one of the big benefits of Reaper is having Kenny's incredible library of video tutorials, all free; it makes the software so much easier to figure out and use):
