The point is, that a 3-wire allows proper biasing of the FET; they vary widely sample to sample, so it has to be measured in circuit using a scope to view the resulting waveform.
The grounding of the source pin of the FET in a 2-wire capsule results in higher output, and therefore more likely to overload on loud sources. The self noise from a small electret comes mostly from the capsule itself, not from the FET.
No inherent increase in susceptibility to hum with 3-wire, as long as the mic utilizing it is properly constructed.
