Another very important factor in brewing a good cup is the temperature of the water during the brewing cycle. Too hot or too cold can make the taste acidic. A machine that has variable temps as an option can really improve the taste of your coffee.
I grind my own beans and my grinder has a large selection for the type of ground needed for the specific machine to be used.
Grinding temperature is also important. The ones with a metal knife overheat the beans while the ceramic helics mills are much better also in producing a uniform grind with no dust size particles that can make the brew bitter.
