If you are recording more than one person, as in any professional studio, there is no such thing as a preferred mic outside the context of a specific singer, song, genre, album, etc.. You need to have a variety of at least three good mics with distinctly different character to cover different voices and instruments. Examples would be a U47 style, a C12/251 style, and perhaps a U67 or Sony C37A style or ribbon. The U87 has some of the body and cut of a U47 but less refined and less larger than life. None of those are better or worse than the other. They are just different and suit different sources and contexts. To some extent you can get away with chasing those different contexts with EQ, but it's not the same.
