I suggest you have a good listen to some of Magnús Bergsson's LDC recordings (and he is perhaps the best example of a nature recordist using LDCs, as he has the whole panoply of kit, including multiple MKH SDC mics, including a couple of MKH30s, yet still continues with a variety of LDCs for certain sounds(capes)) :

I'm not in Magnús's league, but also use LDCs when needed, and can't say it's the off-axis response that is the downside.
