In other words... in realtime, that's fine just work with the 0.1dB resolution - but if I automate the volume between 1dB and 2dB does it "step" in 0.1dB increments x10, or does the resolution increase? Ie: 1.01dB --> 1.02dB --> 1.03dB.
Some plugins will even give you 3 digits and let you you automate within a thousandth of a dB - automating those give you the smoothest result.
Have you actually tried doing that? do you hear the stepping? In my experience most of the plugins that offer a stepped input method are doing it for the GUI knobs, and they comply with whatever fractional value an automation send them.
I'd use a simple (stock when available) plugin for all gain-related tasks. Faster to go to it for adjustments on every track instead of guessing on track x on what EQ I used the trim option for gain...
