Will a thunderbolt hub cause latency?

I'm planning on using a Mac Mini and hooking up:

Apollo Twin Duo
Thunderbolt SSD (project recording drive)
Displayport monitor

Would using these together with a thunderbolt hub induce latency?

It takes time for any signal going through a circuit, Thunderbolt is fast enough that you will not detect the delay.

You could also use a USB3 hard drive, they have more bandwidth than FW800

I read somewhere that TB hubs and drive enclosures that have other ports on them (USB etc) slow down a bit more than those that are TB only but I suspect negligible.

I can't seem to find any hubs with only thunderbolt.

To my knowledge, there are none. Because Most Thunderbolt devices have two connectors for daisy-chaining.
