If you have 1/8 inch plugs now, just make or buy a pair of 1/4 inch adapters. As for all those outputs, if you don't need them don't use them. Just set your software to use stereo outputs 1/2 only. If you find yourself needing 5.1 outputs at some point in the future, they'll already be there waiting for you.

use 2 channels from whichever card does the best D/A conversion.
