how does the modeling mic sound to you, if you just listen back flat?

You are kind to say that. In fact, I don’t think anyone, myself certainly included, can rely on memory to make a reliable audio comparison of vintage vs modern gear. Audio memory, especially of fine incremental differences, is very fleeting.
I assume (yeah, I know the saying) that a person or team at Slate has spent chunks of recent time comparing their modeling to hardware examples of the target vintage microphones. So about those desired vintage mics, Slate’s opinions are (probably) more current. That’s not to say that he would be unbiased about how good his models are, that’s asking for audio sainthood.
Modeling mics, in my limited experience, sound neutral. They sound somewhat like audio test mics. I kind of like neutral/dark on good-sounding sources.
